Yum. Chocolate and Bananas. Studio Space. And Red Velvet

First let me start with this week's recipe...

What could be better with bananas than chocolate? In my humble opinion, the only way to eat them. This recipe is modified from the one my mom made for us growing up! Enjoy!
Mom’s Banana Bread

½ c. {1 stick} unsalted butter, softened
1 c. granulated sugar

Preheat your oven to 350 degrees. Cream butter and sugar together well. I like to whip them up nice and fluffy.

1 egg

Add and mix well.

3-4 over-ripe bananas, mashed

The amount is depending on how big they are…if they're fairly large, I stick with 3... I put these on a plate a smoosh them lightly. Add to the above mixture and stir until blended.

2 c. all purpose flour
1 tsp. baking soda

Add to wet ingredients and mix lightly. It’s important when you’re baking to do the extra mixing early, with the sugar, butter and eggs. They like to have the air whipped into them – it’ll make your end product lighter, and fluffier. But – once you add the flour, you generally want to stay away from too much mixing. It’ll have the opposite effect and make your final product tough. Yuck.

1 c. nuts…. or chocolate chips! {WooHoo!}

Stir into batter with a spoon.

I know the average person adds nuts to banana bread, but, we’re NO nut people around here. Has potentially deadly consequences for our little guy. No offense to those of you who love them! In fact, as a child, we would spread peanut butter on our slices of banana bread! I still miss that.

Anyway. Back to directions…

Pour batter into a buttered bread pan. {Or muffin tins – these make great muffins, too!} Pop into your preheated oven and bake for 1 hour – 1 hour 15 minutes. The bread is ready when an inserted toothpick comes out moist, and not gooey. {muffins will only take about 20 minutes per batch.}

Remove from oven and cool for 10 minutes. Then run a knife around the edges and turn out onto a cooling rack. Now perform evasive maneuvers, or grab a slice as soon as possible, because this will disappear if you leave it where it is! :D

My guilty pleasure from yesterday. I was at a Starbucks Cafe in the afternoon... I need to make these at home again. YUM. {If you haven't figured it out yet - I've got a crazy sweet tooth! :)}
